The Sylvester’s chic, tropical look is a welcome change

A welcome change to what this space used to be when the guys from Beaker & Gray took it over. As it’s previous incarnation Boombox, it lacked personality and was a bit too “clubby.” Now it’s exactly what you would expect from B&G.

Sampling their gourmet bar bites and of course outstanding cocktails made for a fun happy hour outing. I mean Ben Potts, famous for creating the stellar concoctions at Beaker, is the man behind the cocktail menu at The Sylvester. Seriously, you can’t go wrong.

And the names, oh those cocktail names are very creative like…

Ñooo Que Frio on the right and The Deuce on the left

Ñooo Que Frio, made with Bacardi Cuatro, Nitrogen-Muddled Mint, Green Apple, Strega and Sparkling Wine, is delightful and very, very green.

And although not my particular taste, there’s also The Deuce, a simple two part cocktail. One part Don Julio Reposado shot and one part Lacto-Fermented Sangrita with pineapple-cilantro shrub and mole bitters.

Stillman’s Zombie

There’s also the Stillman’s Zombie a blend of Appleton 12 Year, Wray & Nephew, Paranubes, pineapple, smoked BBQ dry spice syrup and a few other ingredients. The smokey flavor is definitely present and I welcomed it more each sip I took.

As creative as their cocktails is the food. I went with the traditional media noche, made with Palm Sugar ham, house mustard and Kirby cucumber. It’s meaty and filling and according to Potts, made by a Cuban-American at The Sylvester who knows what he’s doing. I would definitely agree.

Other options on the menu include an arepa grilled cheese, a Proper Sausage board featuring the selection of housemade sausages from the Miami Shores purveyors, a smoked white fish dip made with garlic cream cheese with salt ‘n vinegar wontons for dipping and plenty of tasty desserts.

Next time you’re heading to Midtown or Wynwood, stop in at The Sylvester for a cocktail and a few bar bites. You’ll love the tropical ambiance and well…everything else.
