The cuisines of Peru and Japan are expertly represented in the menu at Suviche, one of the Brickell area’s newest eateries. The unique concept of blending the two cuisines came from wanting to serve the freshest possible food from two regions that are never represented together.A trained sushi chef prepares the colorful and creative items in an open kitchen where diners can watch their order being prepared. Everything here is made fresh to order, which is the only way the owner and his staff would have it done. It ensures customers are getting only the best of everything.What’s commendable about Suviche is that they’ve so ingeniously blended sushi (the Japanese classic) and ceviche (Peru’s best known item) into the menu. Each of the items has touches from both countries and it works. A Peruvian chef helped develop the dishes and it shows in the expert execution and well thought out selections.And knowing that young professionals love to have plenty of happy hour choices in the area, there’s sushi Tuesdays where diners buy a roll and get half off the second one or the Wednesday special where a bill of $25 or more gets diners a complimentary small ceviche.
