Mlt is all cheesy perfection

When I first received the assignment to write about Mlt I didn't know what to make of it. I had spoken to one of the owners, who I was set to interview, and she told me "we're really a fast food-type place."So I was pleasantly surprised when I arrived and found that they specialize in grilled cheese and Philly cheesesteaks. You can pretty much say I felt like I'd died and gone to heaven. Grilled cheese? I'm so there. And cheesesteaks? C'mon, they both have cheese right? Can you tell cheese is one of my ultimate passions?I walk in and immediately grab their menu to take a look and with just one glance, I'm permanently transfixed on...truffe mac 'n cheese...wait for it...topped with short ribs. That was it, I was having that before I left, that was for sure.The interview goes great. Jessica, a managing partner is fantastic and it's obvious from our chat that she and her three partners are major foodies. She tells me that the three guys she's partnered with wanted so badly to make their Philly cheesesteaks authentic and perfect they actually traveled to Philly on a cheesesteak-tasting mission. Once they were satisfied with their research, which involved sampling as many of the city's signature sandwiches as possible, they returned to fill the menu with their own creations and twists to it.I was also curious about the name and how they came up with Mlt and she explains that it's a play on the word "melt." How genius is that!But enough of that, on to more important things, that mac 'n cheese. We conclude our interview and I finally get to sample it. I can't stop eating it. Creamy, gooey, oozing, rich, decadent...oh I could go on. Best to probably leave it at that so you'll go try it. They're on 15th and Washington Avenue on South Beach.
