1111 Peruvian Bistro's got the pulse on fusion

Creating a unique Peruvian-Asian fusion for his menu at 1111 Peruvian Bistro is Founder and Chef Martin Monteverde's goal in his restaurant's kitchen.With a prime location in the Axis Building in Brickell, the inviting interior and ideal outdoor patio seating make this the perfect spot for lunch or dinner.Inside, grab a table or a seat at the inviting bar that's adorned with thin, modern chandeliers over head. The light colors throughout compliment the colorful and massive candle that adorns the bar. Seriously, it's like a work of art and you won't be able to take your eyes off it's colorful wax drippings.Once you're settled in I suggest you order a cold beer from their extensive selection or perhaps a Pisco Sour, Peru's signature drink. Start off with the empanadas de aji de gallina as an appetizer. They're a smaller version of the traditional Peruvian dish and come three to an order. Perfect little golden brown pockets filled with a delectable blend of chicken, Peruvian yellow peppers, onions, garlic, nuts for crunch and parmesan cheese.They've also got soft pillowy Bao Buns (there's that Asian influence I mentioned), filled with meaty braised pork belly, coleslaw, pickled cucumber and spicy mayo.And it would be a crime to visit a Peruvian restaurant and not try their ceviche. The ceviche de aji amarillo or traditional, is a tart, limey blend of corvina, cancha, choclo the very recognizable oversized Peruvian corn kernels and sweet potato that you can choose to have in tigre de leche or aji amarillo.For another taste of Asian flavor try the Acevichado maki, a Nikkei style sushi filled with tempura shrimp and avocado, topped with thin sliced tuna, colorful house acevichado sauce and bright orange shoestring sweet potatoes. What's great too, is that it's served with both soy and eel sauce, giving you two unique dipping options. Looks almost too pretty to eat, but put that thought out of your mind and dig in.The plating here is as well thought out as the menu which Chef Monteverde worked hard to develop and his staff execute beautifully.
