Boulud Sud's fantastic on its own, Flor de Caña rum took it over the top

Rum is one of my favorite spirits and Boulud Sud is a restaurant I never mind returning to so, the Flor de Caña Mixtromony Dinner at the Downtown Miami eatery was a night I wasn't going to miss. Glad I didn't.Starting the night off with Iberico Ham croquettes, smoked salmon roulade and a Flor & Tonic cocktail, made with Flor de Caña 4yr Extra Seco and cracked black pepper, was something special. That was the beginning of our "Five Senses Tasting" dinner hosted by the rum makers.Being led into a private room to enjoy what was to come felt very VIP. Not only was the room gorgeous but it was wonderful to sit around a large table and see all my fellow guests. Intimate and elegant.The first course was presented and I was immediately excited knowing they were escargots. Beautifully presented and prepared with almond, parsley and tomato, they were paired with the "Translation" cocktail, made with Flor de Caña 7yr, lime juice and Angostura bitters. Notice the second drink was prepared with a higher aged rum. Pay close attention to those years as we progress.Second course was a tender rabbit terrine with rich black truffle and foie gras plus crunchy pistachio. This was an interesting course, paired with "Cerro Negro" made with 12yr Flor, cognac, dry curacao and cinnamon for a hint of spice. For the third course we were served several slices of tender veal accompanied by meaty mushrooms, artichokes and pillowy gnocchi. The cocktail pairing for this one was tops for me, a Nicaraguan Barrel-Aged Old Fashioned made with 18yr Flor, vanilla bean and clove syrup, Angostura bitters and orange peel. Cue the theme from Mad Men.And we ended it all with a delicate and perfectly plated roasted pineapple with honey caramel, coconut cream and banana and kalamansi sorbet, simply paired with Flor de Caña 25yr. We finished on a definite high note with this smooth as silk rum.Do yourself a favor, buy some of this amazing rum and dine at Boulud Sud.
